Glycemic index and load are always estimations, becaus there are many factors that influence the GI and GL of a product.
A few examples are:
-the method of preparation (boiled of fried)
-the duration of the preparation
-the temperature of the preparation
-for fruits is degree of maturation of influence
-what is already in the stomach
-the velocity of the digestive system
-the compostion of a meal
In SweetHealth all these factors are unknown, which means the ght GI and calculated glycemic load are alway estimations and never absolute values.
